Valpolicella Ripasso is distinguished by the addition of must to the residual and sugar-rich pomace (solid parts such as grape skins) of Amarone della Valpolicella.
Tasting notes: light in colour, the bouquet features notes of cocoa, cherry, spices, and coffee. On the palate, it is dry, with good acidity and body. A very balanced and elegant wine.
The Origin of the Ripasso Method
Ripasso is a wine born from peasant ingenuity, an example of what we now call "circular economy" (at that time, common sense and wisdom). Sharecroppers produced Recioto, a sweet and renowned wine, for the landowners, but they were allowed to keep the pomace after fermentation. This pomace was refermented using the "ripassare" technique in the base wine they produced for their families' sustenance. The addition of the must to the sugar-rich pomace resulted in a fuller-bodied and more caloric wine, an important source of energy for the families.
