Drying: dehydration on the vine.

Pressing: gentle, after careful selection of the bunches.

Vinification: slow fermentation at a controlled temperature of 16°C in temperature-controlled stainless steel tanks until the desired alcohol content is reached. Alcoholic fermentation is then stopped by cooling and subsequent filtration of the product.

Ageing: in temperature-controlled tanks. Bottling occurs in the fifth year after harvest, followed by a long period of bottle ageing.

Alcohol content: 17.5%

Total acidity: 5.2 g/l

Serving temperature: 12°C (in large red wine glasses)
