The special care and attention given to cultivation and processing make Melotti Rice one of the best in the world.
Carnaroli Rice is considered one of the best varieties of rice for risotto. Ideal for creamy risottos and rice salads, it has excellent resistance to overcooking.

The Melotti family
In the 1980s, the economic viability of small farms began to be increasingly questioned due to the low value of cereals. In the spring of 1986, Giuseppe Melotti manually sowed one and a half hectares of rice paddies and immediately began to cultivate and sell the best varieties of Italian rice under his own name.
The choice to produce and process only self-grown rice, adhering to quality criteria, was a courageous decision by the Melotti family, maintained and consolidated over the years. The same attention and care given to choosing and cultivating the best land are maintained in the processing of the rice, which does not undergo any chemical intervention or manipulation, thus arriving intact and genuine at your table. Dedicating fundamental attention to each stage is a daily commitment: product traceability and certainty of its origin and derivation are factors considered indispensable by the Melotti family.
Today, the Melotti farm is passionately managed by its founder Giuseppe and his wife Rosa, known as "Rosetta," together with their children Luca, Gianmaria, and Francesca. From the creativity of the Melotti family and Mamma Rosetta's recipes came the idea of creating some rice-based specialties with Melotti rice and rice flour. Thanks to Mamma Rosetta's culinary expertise, in 2022, the Melotti Risotteria was opened in the heart of Isola della Scala, and is now also present in Rome, Florence, and New York.
