Known as Biriquocoli in the time of Lorenzo the Magnificent, cavallucci are one of the most traditional creations in Sienese confectionery. They are made from the artisanal processing of excellent quality raw materials, including flour, candied oranges, sugar, walnuts, honey, coriander seeds, and anise. The ingredients are always fresh and sourced from the best farms. Each cavalluccio is skillfully kneaded and worked by hand by the master bakers. Once the desired shape is achieved, the cavalluccio is ready for baking. The consistency of cavallucci is crunchy on the outside and soft on the inside. On the palate, the flavours of fennel and oranges stand out.

La Fabbrica del Panforte is located a few kilometres from Siena. It is like a small but vigorous plant, with its roots in the land and culture of the city. The result is high quality: artisanal bakery products, cared for down to the smallest detail.
For its creations, La Fabbrica del Panforte draws inspiration from the past, from the original recipes of Sienese pastry tradition, inherited from the Panforte Masters. Known and appreciated since the Middle Ages (13th century), when pilgrims and spice merchants passed through the Via Francigena, Panforte is the Sienese sweet par excellence. It is the result of the transformation and baking of a dough based on quality raw materials: flour, candied fruit, almonds, sugar, honey, and spices.
