Recioto is a dessert wine made from red grapes, traditional to Valpolicella, absolutely unique, with origins dating back to antiquity. The prolonged drying of the grapes concentrates the sugars, but the harvest in early September ensures an excellent level of freshness. The result is a perfectly balanced wine, with harmony between sweetness and acidity, aromatic intensity, and persistence.

The aromas evoke cherry jam, cinnamon, clove, as well as dark chocolate and mint. On the palate, it is velvety, with soft but present tannins, which give it remarkable persistence.

Food Pairing: it is an exceptional dessert wine, which pairs perfectly with dry sweets, such as Tuscan Cantucci, or cocoa-based desserts, but also with well-aged or blue cheeses, or even with main courses with fruit-based or red berry sauces.

Grape Varieties: Corvina Veronese (40%), Corvinone (40%), Rondinella (15%) and Oseleta (5%)

Harvest and drying: the harvest is manual, with grape selection in the vineyard, and takes place at the end of September. Drying process in fruttaio. The grapes lose 45 to 50% of their original weight.

Winemaking: destemming and pressing are carefully carried out at the end of January. The grapes are fermented in stainless steel tanks at a temperature of 8 to 22°C. Fermentation takes place over 25 days with continuous pumping over. Maturation occurs in oak barrels for 14 months. After blending, the wine rests for 2 months before bottling. It ages for at least another 10 months in the bottle before being released.

Serving Temperature: should be served between 12° and 14°C
