The Madernassa pear is a traditional pear variety from the Piedmont region (especially in Roero, Cuneo province), ideal for cooking, particularly in red wine. It has white, crisp and sweet flesh, with a thin yellowish or brownish skin.

In this creation, Chef Davide Palluda cooked it in Langhe DOC Nebbiolo wine, a high-quality, tannic and dry wine, aged in oak barrels, made exclusively from nebbiolo grapes, the varietal of the famous Barolo and Barbaresco wines.

Ingredients: Madernassa pears (86%), water, sugar, Langhe DOC Nebbiolo wine, lemon juice and syrup.

Langhe and Roero

Langhe and Roero: the two banks of the Tanaro river, an invaluable heritage, a landscape strongly influenced by the presence of vineyards, a culture that ended up shaping the hills. But a careful eye cannot fail to notice the differences: in the Piedmontese dialect, the term Langa indicates the strips of land with gentle profiles, which follow one another, characterising the landscape. The Roero territory is varied, alternating, in rapid succession, the wild beauty of the rocks with the moods of the woods, with the very orderly slopes of vines and peach trees.
