Known and appreciated since the Middle Ages (13th century), when pilgrims and spice merchants passed through the Via Francigena, Panforte is the quintessential Sienese dessert. It is the result of the transformation and baking of a dough based on quality raw materials: flour, candied fruit, almonds, sugar, honey, and spices. The ingredients are always fresh and sourced from the best farms. The PGI designation guarantees strict control of the production process combined with the use of premium raw materials. The almonds are of the best quality, of Italian origin, mainly from Puglia, hand-selected. They are soft, flavourful, and rich in essential oils that characterise their aroma. The fruit is processed using traditional techniques, to achieve an optimal level of softness and sweetness.
The 100g, 250g and 450g formats are hand-packaged according to the Sienese pastry tradition. The half-kilogram format uses a taller mould and transparent packaging.
Panforte Siena PGI Nero, also known as Panpepato, is one of Siena's oldest traditional sweets. Its strong flavour comes from a mixture of intensely flavoured spices such as nutmeg, cloves, and allspice. After cooling, each Panpepato is manually and individually packaged.
La Fabbrica del Panforte
Fabbrica del Panforte is located a few kilometres from Siena. It is like a small but vigorous plant, rooted in the land and culture of the city. The result is of great quality: artisanal bakery products, cared for down to the smallest detail.
For its creations, Fabbrica del Panforte draws inspiration from the past, from the original recipes of Siena's pastry tradition, inherited from the Masters of Panforte.
