Taggiasca olives in brine are an excellent Ligurian product and are among the most renowned in the world, not only for oil production but also as table olives. They are characterized by a sweet flavour and very low acidity, which confirms their excellent quality. They are excellent as an aperitif, on their own, although Ligurian culinary tradition offers countless recipes in which Taggiasca olives are included. They pair perfectly with meats (such as Sanremo-style rabbit stew or lamb with olives), as an accompaniment to fish (such as Levante-style cod), or roast beef.
