Made with Williams pears from the I.G.P. (Protected Geographical Indication) area of Mantua, this traditional Mantuan preserve has always been used to accompany boiled meats, Salame Mantovano, and Parmigiano Reggiano. Thanks to its balanced spiciness and perfect consistency, it harmonises not only with all hard and aged cheeses but also with cured meats, in addition to the traditional boiled meats. Its versatility is evident in the kitchen, whether in first courses, such as gorgonzola risotto or pecorino ravioli, or in second courses such as a guinea fowl salad.

Ingredients: pears, sugar, mustard flavouring. Fruit used: 160g per 100g of product.

Culinary suggestions: ideal to accompany aged cheeses such as Parmigiano Reggiano, Pecorino Stagionato, Provolone, Gorgonzola or Fontina, or cured meats, such as Prosciutto Crudo di Parma, Mortadella di Bologna IGP, Coppa and Salame Mantovano. It can also enhance second courses such as Arrosto di Vitello or Pesce Spada Affumicato or over a chocolate ice cream.

Le Tamerici

Located in the small municipality of Bagnolo San Vito, Le Tamerici is a place where gastronomic tradition meets research and experimentation. Founded in 1991 by Paola Calciolari, it produces quality preserves, especially jams and mustards. It rediscovers long-forgotten traditional ingredients from the province of Mantua (Lombardy region), such as the Campanina apple or white watermelon, and uses unusual vegetables and fruits for candied fruit, such as green tomatoes and pumpkin.

Le Tamerici combines an artisanal and niche spirit with the use of cutting-edge production technologies. The progressive expansion of the company has not compromised quality. The high standards of its production processes are proven by the achievement of two of the most important international quality certifications: IFS and BRC.
