Although spread throughout Italy, the main regions where Inzolia is grown are Tuscany (where it is called Ansonica) and Sicily, where there is historical evidence dating back to Roman times, such as Pliny the Elder. Inzolia was mainly used to produce fortified wines like Marsala, but today we also appreciate its pure flavour with its fresh and dry taste.
Tasting notes: It presents a straw yellow color. Slightly aromatic, it is fresh and dry on the palate. To be drunk immediately or stored for two to three years.
Food pairing: Especially suitable for delicate appetizers, quality cold cuts, and fish starters.

Winemaking: Destemming, soft pressing, and static sedimentation at controlled temperature. Maturation for approximately 2 months in steel tanks on fine lees to enhance the characteristic notes of the vine. After bottling, it remains in the bottle for about one month at a controlled temperature.
