Grillo is a classic Sicilian grape that lost popularity during the 1950s and 1960s due to its low productivity. The vineyards are mainly located on the western side of Sicily, in Marsala and adjacent areas. What makes Grillo special is its surprising acidity, despite growing at low altitudes and in a hot, arid climate. It performs well in sandy soils, where it exudes freshness, floral and fruity aromas, such as grapefruit or passion fruit.
Tasting notes: Pale yellow wine with fresh fruit aromas.
It has a balanced body. Drink immediately or store for two to three years.
Food pairing: Goes particularly well with fish and seafood dishes.

Winemaking: Destemming, soft pressing, and static sedimentation at controlled temperature. Maturation for approximately 2 months in steel tanks on fine lees to enhance the characteristic notes of the vineyard. After bottling, it undergoes bottle aging for about one month at controlled temperature.
