Grillo is a classic Sicilian grape variety that lost popularity during the 1950s and 1960s due to its low productivity. The vineyards are mainly located on the western side of Sicily, in Marsala and adjacent areas. What makes Grillo special is its surprising acidity, despite growing at low altitudes and in a hot, arid climate.
Tasting notes: straw yellow colour and perfume with notes of fresh fruit. On the palate, it is intense but delicate, with an excellent structure and fragrance, and fine, persistent perlage.
Food pairing: ideal as an aperitif, it accompanies cheeses and basic fish dishes, soups, seafood, vegetables, legumes, and dessert.

Sustainability, transparency, and valuing the territory have been the cornerstones of the Madaudo winery's production philosophy: extracting the maximum quality from Sicily's fertile lands, highlighting the peculiarities of the vineyards, interpreting their characteristics, and developing them through different production techniques, from steel to wood, from sparkling wine production in autoclaves to refermentation in the bottle, thus enhancing the personality of each grape variety.
