In Cantuccini al Pistacchio, typical sweets of the Tuscan tradition, the pistachio originating from the Mediterranean region shines, its green colour and intense flavour contrasting with the sweetness of the cantuccio. They are made from the artisanal processing of excellent quality raw materials: flour, almonds, sugar, eggs, butter and honey.

The best quality almonds are hand-selected to avoid possible impurities and used whole, unshelled. The PGI designation guarantees strict control of the production process. After preparation, the cantucci are baked and then cut while still hot to obtain their characteristic oblique shape. After cooling, the cantucci can be packaged in various formats. The final result is a sweet with a strong almond and egg flavour and a crunchy texture.

Known and appreciated since the Middle Ages (13th century), when pilgrims and spice merchants passed through the Via Francigena, Panforte is the Sienese sweet par excellence. It is the result of the transformation and baking of a dough based on quality raw materials: flour, candied fruit, almonds, sugar, honey and spices.
