Bottarga di Muggine production is a food obtained by drying the roe sack of grey mullet. At Tharros Pesca, the meticulous process begins with the selection of the best mullet specimens. The roe, rich in intense and authentic flavours, is delicately separated from the fish, salted and pressed to achieve the ideal consistency. The result is a sublime creation — amber-coloured and intensely flavoured roe — that combines the magic of tradition and respect for raw materials.

Grey mullet roe is eaten sliced or grated, mainly in pasta dishes, but also on crostini or in seafood starters.

Today, 95% of Bottarga di Mugine comes from Africa, Australia and the Philippines. Pino Spanu's Tharros Pesca is one of 5 producers who still persevere to offer us authentic Bottarga from Cabras, in the province of Oristano (Sardinia).

Tharros Pesca was founded in Cabras in 2004 by Pino Spanu and specialises in processing fish from Sardinia and the Mediterranean Sea. Carefully selected raw materials and the artisanal preservation process, passed down from generation to generation, guarantee a high-quality product.
