Tasting notes: intense purple-red in colour. On the nose, the fruity aromas of Barbera and its toasted notes, from ageing, recall sour black cherry with alcohol and cocoa. On the palate, its structure is very pronounced, supported by the vibrant acidity typical of this wine, even in years of optimal ripeness.
Food pairing: dishes with rich flavours, pasta, white and red meats, cheeses and cured meats.

Harvest: manual, at the end of September.
Vinification and ageing: after destemming and crushing, fermentation takes place at controlled temperatures in steel vats. Maceration lasts approximately 7 days. When the grapes are perfectly healthy, the wine is transferred to 226-litre French oak barrels to complete alcoholic fermentation and continue malolactic fermentation. Without colour problems, bâtonnage is carried out in the oak barrels. The aim of this process is to stabilise the colour and produce perfect harmony between the wine and the wood. There is no fining or filtering. The wine remains in the barrels until the end of the summer of the second year after harvesting, when it is bottled.
