Polara Cedrata is a non-alcoholic, 100% Italian drink, produced from carefully selected Diamante citrons. The citrons are harvested between October and November in the valuable citron orchards of Calabria, when the rind is still green and rich in aromas and powerful antioxidants. The citrons are transported to Salò, in Lombardy, where Tassoni is located and the cedrata is produced: the thin outer rind is removed and subjected to a steam distillation process in old copper stills dating back to 1872.

Serve with ice and a basil leaf to enhance the aroma and flavour.
