Tasting notes: the 2019 vintage of this magnificent Amarone della Valpolicella from Cantina Pasqua presents an intense purple hue and a fresh aroma, characterized by vegetal notes of juniper, blackcurrant, wild blackberry, and tree bark, accompanied by the classic sweetness of black cherry. The palate reflects the nose: intense, full-bodied, structured, and warm, with a persistent finish.

Amarone della Valpolicella DOCG is produced using the traditional Appassimento or passification method, during which the grapes are partially dehydrated before pressing. This process gives the wine its rich and complex character, with intense aromas of jam, raisins, and violets, combined with subtle spice notes.

Food pairing: this wine is the perfect choice for lovers of rich and full-bodied red wines, ideal for accompanying particularly gastronomic dishes such as game, grilled or roasted red meats, and aged cheeses.

Grape varieties: Corvina 65%, Rondinella 25%, and Corvinone 10%

Vinification and aging: the grapes are harvested manually in mid-September and placed to dry in a drying shed for about 3 months. During this period, the bunches lose approximately 25% to 30% of their weight, and the substances present in the grapes concentrate. After pressing, alcoholic fermentation begins in steel tanks, lasting about 25 to 30 days at a controlled temperature. Continuous pump-overs are performed to favor the extraction of color and tannins. At the end of this process, the wine is transferred to French oak barrels, where malolactic fermentation takes place, giving it softness. After a maturation period of about 18 to 20 months, the wine is bottled and remains to age for another four months. It is a wine that continues to evolve in the bottle, with great aging potential. An Amarone can age in the bottle for at least 20 years.
