Tasting notes: Folonari's Amarone della Valpolicella DOCG is a deep ruby red wine that turns garnet as it ages.
It is made from a blend of grapes including Corvina, Corvinone, and Rondinella. The nose develops characteristic aromas of dried fruit, tobacco, and spices. The taste is full-bodied and powerful, with a long and persistent finish, dominated by notes of dried fruits, such as plums and toasted almonds.
It is produced using the traditional Appassimento or 'passification' method, during which the grapes are partially dehydrated before being pressed. After harvesting, producers spread the bunches inside the cellar for this dehydration process to occur. They remain there for 30 to 100 days, depending on the type of wine. During this period, the grapes can lose up to 40% of their moisture in some cases. This process gives the wine its rich and complex character, with intense aromas of jam, raisins, and violets, combined with subtle notes of spices.
Amarone wines can generally age in the bottle for about 20 years.
