Gluten-free Soft Pistachio Amaretti are made by hand-crafting excellent quality raw materials: almonds, pistachios, egg white, sugar, honey. The sweet and bitter Italian almonds, mainly from Puglia, are soft, flavourful and rich in essential oils that give them a unique aroma. The pistachios used in this variant are of exceptional quality. The characteristic bitter aftertaste is given by a small amount of expertly balanced bitter almonds. Each amaretto is shaped by hand, then gently browned in the oven, dusted with icing sugar that helps keep it soft (morbido) inside. After cooling, it is packaged in sealed food-grade trays and then placed in decorated paper boxes.
The absence of gluten means that they can be enjoyed by those with gluten intolerance and coeliac disease.

La Fabbrica del Panforte is located a few kilometres from Siena. It is like a small but vigorous plant, with roots in the city's land and culture. The result is of great quality: artisanal bakery products, cared for down to the smallest detail.
For its creations, La Fabbrica del Panforte draws inspiration from the past, from the original recipes of the Sienese pastry tradition, inherited from the Panforte Masters. Known and appreciated since the Middle Ages (13th century), when pilgrims and spice merchants passed through the Via Francigena, Panforte is the Sienese sweet par excellence. It is the result of the transformation and baking of a dough based on quality raw materials: flour, candied fruit, almonds, sugar, honey and spices.
