Gluten-free Amaretti Morbidi al Limone are made from the artisanal processing of excellent quality raw materials: almonds, lemons, egg whites, sugar, honey. Firstly, sweet and bitter almonds of Italian origin, mainly from Puglia, are soft, flavourful and rich in essential oils that make their aroma unique. The lemons used in this variant are of the highest quality: the lemon caramelization period lasts almost two weeks, preserving all their aromas in an enveloping flavour. The characteristic bitter aftertaste is given by a small amount of expertly balanced bitter almonds. Each amaretto is hand-shaped, then gently baked in the oven, dusted with icing sugar that helps keep it soft (morbido) inside. After cooling, it is packaged in sealed food-grade trays and then placed in decorated paper boxes.

The absence of gluten means they can be enjoyed by those with gluten intolerance and coeliac disease.

Known and appreciated since the Middle Ages (13th century), when pilgrims and spice merchants passed through the Via Francigena, Panforte is the Sienese sweet par excellence. It is the result of the transformation and baking of a dough based on quality raw materials: flour, candied fruit, almonds, sugar, honey and spices.
