Gluten-free Amaretti Morbidi al Cacao are made using traditional methods and high-quality ingredients: almonds, cocoa, egg whites, sugar, and honey. The sweet and bitter Italian almonds, mainly from Puglia, are soft, flavourful, and rich in essential oils that give them a unique aroma. The pure, high-quality cocoa provides a sweet and strong flavour and an incredible consistency. The characteristic bitter aftertaste comes from a small amount of expertly balanced bitter almonds. Each amaretto is shaped by hand, then gently browned in the oven, and dusted with icing sugar, which helps to keep it soft (morbido) on the inside. After cooling, they are packed in sealed food-grade trays and then placed into decorated paper boxes.
The absence of gluten means they can be enjoyed by those with gluten intolerance and coeliac disease.

La Fabbrica del Panforte is located a few kilometres from Siena. It is like a small but vigorous plant, with its roots in the city's land and culture. The result is high quality: artisanal baked goods, with attention to the smallest detail.
For its creations, La Fabbrica del Panforte draws inspiration from the past, from the original recipes of Siena's pastry tradition, inherited from the Masters of Panforte. Known and appreciated since the Middle Ages (13th century), when pilgrims and spice merchants passed through the Via Francigena, Panforte is the Sienese sweet par excellence. It is the result of the transformation and baking of a dough based on quality raw materials: flour, candied fruit, almonds, sugar, honey, and spices.
