The grapes are destemmed and pressed, then fermented at a controlled temperature (between 26ºC and 28°C), while maceration lasts 3 to 4 weeks, depending on the harvest, with frequent pumping over and délestage. The wine is then transferred to barrels, where malolactic fermentation takes place, after which bâtonnage (the stirring of the must with the aid of a stick, in French, bâton, the origin of the name of this technique) is carried out repeatedly. From spring onwards, the wine rests quietly for 12 months in 225-liter French oak barrels. Three-quarters of the property is dedicated to Montepulciano d'Abruzzo. The vineyards are located in a high area overlooking the Adriatic Sea, on clayey calcareous, morainic, and silty soils, rich in stones (calcareous), between the Pescara Hills, near Pescara and the Adriatic Sea.\u003c\/p\u003e\n\u003cp\u003eIts main Montepulciano vineyard, 4.5 hectares, called \u003cem\u003eFiliani\u003c\/em\u003e in honor of the previous owner, is only 3 km from the beach, at an altitude of approximately 270 meters above sea level, on a chain of silty and calcareous hills near the village of Città Sant’Angelo, within the Colline Teramo DOCG zone. With the Campotino range, they offer quality wines at affordable prices, from young vines, cultivated in a Guyot system, in cooler locations and with lighter soils.
